shortbread cookies.

i am going to get straight to the point, i have a major sweet tooth. sometimes i just look through pinterest at sweets & think about making them all day long.

my mom posted a picture of some cookies she made earlier today & i started thinking of things i needed to bake, bc my sweet tooth was yelling at me. so my next thought was what would cory like.

shortbread!  i found this recipe on pinterest & it is flawless.

even dolly was excited about it

so for starters you are going to put 2 sticks + 2 TB of butter in your mixer & beat for a few minutes.

add 1 cup + 2 TB of sugar & 1 1/4 tsp of salt- mix for a few minutes.

scrape the sides & add 1 egg & beat for a few minutes.

add 1 TB of vanilla (i used haitian vanilla) & 3 cups of flour.

lightly flour a surface to work on

i rolled mine out to  1/2 inch thick and then cut into cute little rectangles.

i put them on a pan  & stuck them in the freezer for about 10 minutes & then put them into the oven for about 12 minutes or until they are lightly golden on the edges.

look how yummy they look.

i am not going to say how many i ate, bc it is slightly embarrassing.

enjoy.

july 4th weekend treats.

these past 2 days have been incredible. i love holidays spent with family & friends. this was by far one of the best 4th of july's we have had.

friday we went to our friends pool- grilled, swam, played pool volleyball, & ate.

i made our families secret recipe chocolate pie.

yummy. i also made some healthy almond bites. i got the recipe here.

they were so good too!

i was having so much fun at the pool i didn't get my camera out. i finally got a little tan, i needed one for the beach. we leave in about a month, so excited to be trying out the daytona beaches.

anyways, we had so much fun & i have a few more posts about the weekend.

what did y'all do for the 4th?

cheers,

mrs. estes
